Creative Process & Inspiration

What was your overarching vision when curating Emberwood's cocktail menu?
It was important the menu offered a diverse range of styles and flavours. The drinks are designed to pair with food but also to stand alone, creating space for both shared and intimate moments.

How did Bath’s and The Francis Hotel’s history influence your cocktail creations?
Bath’s layered history provided rich inspiration, from the Roman roots of Sulis Minerva to the stories held within the hotel’s Georgian townhouses. Combined with exceptional local produce, the result is a deeply rooted and expressive menu.

How did you work with Executive Head Chef David Hazell to ensure harmony with the food menu?
It all starts with tasting. We build a shared understanding of flavour and intensity, and then create drinks that complement and elevate the experience.

Ingredient Selection and Techniques

How did the use of local ingredients shape your choices?
We’ve highlighted local spirits wherever possible. The Queen’s Martini, with its regional gin, vermouth, and apple eau de vie, is a great example.

Were any unconventional techniques or ingredients used?
My work focuses on simplicity and a holistic sense of flavour. It’s about tailoring drinks to the space and guest, creating an experience where all the senses are considered.

What was your approach to no and low-alcohol cocktails?
These drinks deserve equal attention. Creating flavour-forward, well-balanced non-alcoholic options is a creative challenge I truly enjoy.

Guest Experience and Presentation

How should guests explore the cocktail menu?
Start with a Martini from the trolley. From there, the team can guide guests to drinks that match their mood and moment.

How important is presentation in your creations?
Very. We’ve carefully chosen glassware and garnishes that feel elegant and sensory, enhancing the experience visually as well as in flavour.

Which cocktails capture Emberwood’s spirit best?
It’s hard to choose, but the Ponters’ Bloody Mary, with smoked mushroom vinegar, really captures the layered, local approach we’ve taken.

What inspired the Martini Trolley?
It brings the bar to the guest. It adds theatre and intimacy, creating a bespoke moment of connection.
