Meet Sharky Patterson, our General Manager, whose journey into hospitality began in the countryside of Wiltshire and has taken him across Europe and back again. He has always been in pursuit of service excellence and unforgettable guest experiences.

Could you share your background in the hospitality industry? Where did it all begin? 

I grew up in a household where every meal felt like a dinner party. Long before I reached high school, I was the unofficial wine waiter and oyster shucker. I was lucky to travel widely, experiencing hospitality in all its forms, from tasting menus in French châteaux to classic breakfasts in American diners.

In my teens, we moved to Cognac, France, where I was immersed in the Charentes way of life: simple, fresh seafood and wild game paired effortlessly with local wine and brandy. Always elegant, never pretentious.

At 15, I took my first job in a Wiltshire country pub. I was mentored by a seasoned manager with three decades of experience, who instilled in me an unwavering commitment to high standards and exceptional service. From there, I launched a full-time career in London and became one of the youngest managers in my company.

Since then, I’ve led restaurants, hotels, pubs, and clubs. I’ve always gravitated toward standout venues and high expectations. What I’ve loved most is the thrill of opening new spaces: building teams, shaping culture, and consistently raising the bar.

What drew you to this opportunity at The Francis Hotel?  

I wanted to return to a city and work in an operation that was different from the country establishments where I had spent most of my time since leaving London. Openings are always exciting and something I truly enjoy. 

When it comes to leadership within a restaurant team, what’s your philosophy?  

Collaborative, competitive, fun and uncompromising. 

What is the concept of Emberwood? How does it stand out from the dining scene in Bath? 

Emberwood is an all-day brasserie built around fire and flavour. Expect refined yet approachable dishes, prompt and personable service, and seasonal cocktails that keep things simple and sophisticated. We’re here to bring something fresh to the Bath dining scene. Big city energy, delivered with local warmth.

Have you faced any challenges so far preparing for the opening. And how have you overcome them?  

Bringing in experience that will challenge how hospitality is delivered in Bath and the Southwest. Our goal is to deliver a big city experience in a way that Bath embraces and enjoys. 

How have you approached building your team?  

We’ve combined leadership depth with fresh energy. It’s about experience at the top and an eagerness to grow throughout the team. 

What culture and tone will Emberwood bring to ensure exceptional customer service?  

A culture of perfectionism, grounded in the belief that we’re only as good as our last service. Every day is a chance to improve, surprise, and exceed expectations.
